My Favorite Stuffing

Over fifty years I’ve experimented with different recipes for stuffing and have cobbled this together as one of our family favorites. It’s found along with about 100 other favorites in my book, Family Favorites from the Heartland. These recipes are not hard, just plain and simple. A great gift for a bride or someone who likes to cook delicious meals.

Turkey Dressing

Combine:
16 ounces Pepperidge Farm Herbed Stuffing
1-8 ounce can water chestnuts, chopped
10 large mushrooms, chopped
4 celery stalks, chopped
1 large onion, chopped
fresh snipped parsley
1 tablespoon dried sage
1 stick of butter
Moisten with turkey drippings

Bake at 350 for 45 minutes

Delicious Tomatoes

Sounds yummy, once good ripe tomatoes are plentiful.

Want an amazing and healthy side dish? Marinate sliced tomatoes with balsamic vinegar for 4-6 hours. Bake at 350 for about 7 minutes or a little tender. Meanwhile, saute spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and srinkle with low fat cheese of your choice (I chose Italian Blend) and broil until cheese is golden.

Cheesy Quinoa “Grits”

Cheesy Quinoa “Grits”
Prep Time: <5 minutes
Cook Time: 10-15 minutes
Total Time: <20 minutes
Yield: 1 serving

Ingredients:
3/4 cup dry quinoa
1 egg
1 oz. cheddar cheese
Small bunch parsley, chopped
1/2 – 1 tbsp olive oil
Salt and pepper to taste

Directions:
1. Prepare quinoa according to stove top package directions. When quinoa is minutes from being done, heat olive oil in pan and fry egg sunny side up until white is set but yolk remains runny. Add salt and pepper to taste, if desired.
2. Stir parsley into hot quinoa, allowing it to wilt slightly, then plate. Sprinkle with cheddar cheese. Place egg on top. Serve.
